Mr. Alberto Correa previously served as the Division Leader for the Food Characterization Division since joining in March of 2012 and has been integral in the successes of the Food Division of the company. His new role for C.W. Brabender® Instruments, Inc. will allow the Food Characterization Division to continue to grow its business and expand our customer relationships. The newly created Executive Vice President position is responsible for directing the business plan of the Food Characterization Division and its extensive line of food laboratory testing equipment in North America, Central America, South America and Canada.

Alberto Correa brings over 27 years of significant experience and expertise with him to his new role at C.W. Brabender® Instruments, Inc. He has a degree in Electrical Engineering from the Universida Politecnica de Madrid, Spain and is active in the food science industry as a member of the AACCI, IFT, Society of Rheology (SOR) and Society of Plastics Engineers (SPE).

Mr. Laszlo Hasenau has served as Technical Director of R&D and Manufacturing for Brabender® GmbH & Co KG since joining in 2013 and has been integral in the successes of the company. C.W. Brabender® partners with University of Nebraska for a live food extrusion demo at the 2014 IFT Food Expo

C.W. Brabender® Instruments, Inc. has partnered with the University of Nebraska in Lincoln (UNL) for a Snack Food Formulation project that culminates in a live food extrusion demonstration to be presented in the CWB booth # 2718 at the 2014 IFT Food Expo.

Kristen McCarty, in her role as Food Laboratory Manager, has been working with the Dr. Devin Rose from the University of Nebraska on this project for his students to compete in teams to create a tasty, easy to make, snack, produced on Brabender®’s single screw extruder that can be created during a live food extrusion demonstration at the 2014 IFT in New Orleans (June 21-24).

The students immediately began submitting ideas that met the simple criteria of being a formulation for a snack product of any food grade material that can be made on our single screw extruder (attached to our torque rheometer drive unit) and be demonstrated live in our booth # 2718 on the show floor with samples of the end-product being handed out directly to observers at the show.

C.W. Brabender® contributed a food grade, single screw, grooved barrel extruder and a cutting device plus any other equipment that might be needed for product formulation. C.W. Brabender® will host the students for this year’s IFT and provide them an in-booth forum to explain their product, formulation, and steps in development as a means of giving UNL some well-deserved in-booth recognition at the IFT 2014 Food Expo.

In addition to continuing her role as Laboratory Manager, Food Characterization Division, Kristen McCarty will now also be responsible for handling the upper Midwestern states in a sales capacity as our new Account Manager, Central Region. Specifically, she will be responsible for sales in the following states: Kansas, Missouri, Nebraska, Iowa, South Dakota, Minnesota, North Dakota, plus the Canadian provinces of Manitoba and Nunavut.

Kristen joined C.W. Brabender® Instruments, Inc. as Food Laboratory Manager only a year ago and has proven to be a valuable asset to our company, especially as it relates to working directly with our customers. During her first year, Kristen has spearheaded many challenging food testing and validation projects for our key customers. She has successfully completed countless on-site trainings and attended all major food expos while continually maintaining our Food Lab at optimal performance level. The GlutoPeak is a versatile instrument with a range of applications encompassing breeders, millers and product manufacturers. It can assess flour quality in the early stages of breeding which is very crucial for breeders with limited amount of sample. The GlutoPeak can help millers to make decisions at receiving stations based on protein quality rather than on protein quantity. For the product manufacturers, the GlutoPeak can be adapted to new product development applications, determining the quality of flour blends and the impact of the addition of different ingredients to the flour. The GlutoPeak also outperforms other chemical predictive techniques like solvent retention capacity, ruling out any person to person variability, thus limiting sources of errors in results and establishing its rightful place in food laboratories.

Gluten quality is an essential criterion for the evaluation of baking properties. This has to happen quickly, easily as possible, and above all be reliably reproducible for quality management. The innovative and patented GlutoPeak process by Brabender® offers a clever technical solution as an alternative to the rather error-prone rinsing method “by hand”, which is followed by a time-consuming gluten evaluation in the laboratory. In order to describe the functionality of flours, bruised grains, baking mixes or vital gluten, the aggregation behavior of the gluten component is measured in a sample. The device first separates the gluten, and then aggregates it into a characteristic network before destroying it with the rotation of its mechanical measuring paddle. Time curves and torque curves of the physics of the gluten are recorded and displayed by the GlutoPeak graphically. The time to reach the maximum point on the curve, the peak, its height, and the following decline of the curve provide essential information on gluten quality—all of which appear within moments and are easily readable at a glance. Strong gluten results in very fast and high peaks, while weaker quality grades are identified by their delayed and flatter peaks on the curve – down to “null peaks”, which are for example, typical for biscuit wheat varieties. The GlutoPeak measurement takes between 60 and 600 seconds, living up to its designation as a “quick technique”. Hence, with typical flours or baking mixes up to ten tests per hour can be conducted on average with mini samples of 3-10 grams and extremely easy handling.

The introduction to the North American Market is bolstered by scientific poster presentations being given at IFT 2013, GlutoPeak - Predictor of Wheat Flour Functionality, and two posters at AACCI 2013 Annual meeting, Kinetics of Gluten Aggregation - an Indicator of Refrigerated Dough Quality and Modified GlutoPeak Method for Additives. The GlutoPeak is already an award-winning instrument, having taken the Innovation Award during the Europain 2012 in Paris.

Kristen McCarty brings many years of significant experience and expertise in food testing and food quality assurance to C.W. Brabender® Instruments, Inc. Previously, she held the position of Quality Trainee for ConAgra in Saginaw, TX and was promoted to Quality Lead for their Alton, IL location. Kristen was a member of the ConAgra Foods Culture Board and acted as a college recruiter for ConAgra mills during her tenure. Kristen has a B.S. degree in Food Science Technology from the University of Nebraska where she worked closely with Dr. Michael Zeece in the Food Chemistry / Food Protein laboratory, even traveling with him to Ireland to work with other food science students from the University of Cork. Her invaluable experience will be a welcomed addition to the C.W. Brabender® Instruments family of skilled employees.

Kristen McCarty will be responsible for maintaining the C.W. Brabender® Food Laboratory and conducting customer trials on our extensive line of laboratory scale food testing instruments. She will be responsible for handling all customer technical inquiries in support of our food instrument product line for the North American market. Additionally, she will conduct instrument demonstrations and be a presenter during the Food Characterization Division’s Technical Seminars held throughout the year.

Prep-Mill® Two Roll Mill is newly updated

The NEW C.W. Brabender® Laboratory Electrically Heated Prep-Mill® is a universal, heavy-duty machine designed for small-scale milling of elastomeric and thermoplastic materials. The Two-Roll Mill combines the features of precision construction, reliability and serviceability into a mobile and compact milling station, ensuring uniform batch-to-batch mixing characteristics. The electrically heated Prep-Mill® is designed to operate at temperatures up to 260°C, with an accuracy of ± 1°C.

THE DRIVE
A heavy-duty high torque system - the Prep-Mill® drive is designed to provide high torque output from a 2.5 HP sensor-less vector drive with built-in torque overload protection. Monitored by a digital DC amp meter with torque overload indicator, including a digital RPM indicator - variable roll speed of 0-30 RPM. There are dial gauges installed over the rolls to accurately determine the roll gap setting. In addition to the operator trip bar over the mill rolls, two operator 'kick plates' will also stop the drive when actuated. The 'kick plates' are permanently mounted on both sides of the mill. There is also an ‘emergency stop’ on top of the unit. A ‘Safety Guard’ is installed over the top of the rolls for added security. The entire drive is mounted on a heavy gauge mobile cart. The cart includes a cabinet for storage of tools and accessories.

FEATURES
The Electrically Heated Prep-Mill® utilizes improved transfer rolls coated with Acrotherm TK400 (RC 70), an extremely durable coating that substantially extends the life of the roll while providing top quality mirror finish and tolerances - suited for High Wear Resistance.

• Electrically Heated 4"x8" Acrotherm TK400 rolls polished to a mirror finish
• Individual Temperature Controllers to control roll temperature
• Adjustable gap from .005” to .195"
• Standard friction ratio of 1.3:1 or 1:1 for Calendering
• Safety trip bar and operator kick plates with coupled electrical interlock
• Contoured roll guides prevent material from 'creeping off' the rolls and into the bushings
• "Flip-up" design for easy cleaning
• Brass stripping knife permits quick, clean removal of milled stock
• A mixing volume of approximately 250ml, depending on gap setting and bandwidth

The University Of Utah recently acquired the Mini-Compounder TSE 12/36, a 12mm Twin-Screw Extruder with a clamshell barrel and segmented screw elements, for testing and evaluation of Hot Melt Extrusion, Bioability and Solubility studies and have reported back outstanding results and response from the University’s Assoc. Prof. Patrick Kiser. As part of this initiative the University of Utah and C.W. Brabender® Instruments, Inc. have agreed to use the University’s facility as a West Coast laboratory for customer visits to review the instrument as well as run trials of their own materials to see the viability and benefits of this unit in their own testing.
